IMOJIYA ST DAMASCUS SANTOKU 180MM
A product of Seto Cutlery based in the city of Seki, Hyogo prefecture, renowned as a center of sword and knife making in Japan. This knife is constructed from a 33-layer VG-10 nickel damascus laminate. Cladded knives like this are significantly easier to sharpen than mono steel blades and popular with chefs, the multi-layered steel produces unique patterns that ensure two knives are never the same. This series is thin behind the edge with a great standard of fit and finish, the western handle and bolster give the blade a comfortable and well-balanced feel.
