Crafted by master knife maker Makoto Kurosaki in Takefu, Fukui prefecture. This gyuto is made from Aogami Super steel hardened to 63/65 HRC, this super alloyed carbon steel has amazing wear resistance ensuring a long lasting edge which is capable of ferocious sharpness. The stainless cladding on this knife makes it relatively easy to look after whilst the oval rosewood handle gives it a comfortable grip in the hand, The blade is ground thin for very high cutting performance and easy resharpening.
