Hitohira Aogami-2 Damascus Gyuto Rosewood Handle 210mm
Hitohira presents this carbon damascus collection with Aogami-2 at the core, hammer forged in the Fukui prefecture. This series has a fine convex grind and are thin behind the edge giving them great cutting performance whilst the relatively high hardness and alloying of the Aogami ensures great edge holding, these blades are well balanced despite being quite light.
The handles are made from durable rosewood and are nicely finished making this series very comfortable in the hand. Particular care must be taken to wipe and dry this series and a light coating of oil will help to protect the reactive cladding from oxidizing.
