Hitohira Kikuchiyo x Kyuzo Kurouchi Shirogami2 Gyuto 240mm Ocatgonal Lacewood Handle
This Sakai style wide bevel gyuto is hammer forged from Shirogami 2 steel prized for its purity, fine grain structure, and high hardness. Kikuchiyo apprenticed as a knife maker under some of Sakai’s most talented smith’s and is renowned for his forging and heat treatment. Once forged the blades are passed on to Shiraki Kyuzo, a student of Kambei and one of the few sharpeners in Japan able to produce a wide bevel grind with a strong shinogi line. This fine wide bevel grind gives this series exceptional cutting performance and makes them a joy to sharpen by hand.
