Two Sticks Forge have strong family connections with Japan, which is reflected in the style of knife we make, and our general adoption of Japanese knife terminology. Andrew’s first contact with Japanese knives came when he bought a Yanagiba (sashimi knife) and Kurimuki (small chestnut peeler) in a household store in a shopping arcade near Osaka back in early the ‘90s. He regularly returns to Japan and is lucky enough to spend time with some incredible traditional bladesmiths.
Yokichi Seno, KATABA store owner, spent more than 8 years in Tokyo worked at high end French restaurant and 20 years as a chef at Japanese restaurants in London, including Michelin stared restaurants. His passion for Japanese knives is founded on his long experience of working with and maintaining these as beautiful tools.
This knife is forged by Andrew and after Yokichi sharpened with a vertical grind whetstone ("ENDO" Japanese traditional stone wheel) which is foundation process of sharpening they both together worked at Andrew's workshop in West sussex for this YAYOI project, setup of Japanese traditional bladesmith's equipments such as the original Japanese spring hummer and use there methods. After many of process at his workshop then bringing back at our covent garden store, the blade is carefully finished with whetstones and handled.
This series name Yayoi (弥生), which means March in Japanese old calendar, is named after Yokichi's mother name and month of her birth.
