The san-mai construction and stepped grind makes this line easy to thin or sharpen wide bevel style. Ginsanko is Hitatchi’s primary stainless steel and a popular choice with Japanese bladesmiths, as it is not heavily alloyed it is considerably easier to sharpen than most fully stainless steels commonly used.
