
Kichiji Ginsan Nashiji Petty Knife 135mm Chestnut Handle
This collection has a weight and balance more in line with European cutlery but with a traditional style Japanese blade, giving it fantastic cutting performance, ease of sharpening and low maintenance. The rustic Nashiji finish on the blade contrasts with Japanese traditional Chestnut handle. The san-mai construction and traditional grind makes this line easy to thin or sharpen wide bevel style. Ginsanko is Hitatchi’s primary stainless steel and a popular choice with Japanese bladesmiths, as it is not heavily alloyed it is considerably easier to sharpen than most fully stainless steels commonly used.
