
Kichiji Ginsan Nashiji Santoku 170mm Magnolia Handle
This collection has a traditional Japanese weight and balance forged from a tough and durable stainless steel giving it fantastic cutting performance, ease of sharpening and low maintenance.
The rustic Nashiji finish on the blade contrasts nicely with the magnolia handle which is nicely finished and understated. The san-mai construction and stepped grind makes this line easy to thin or sharpen wide bevel style. Ginsanko is Hitachi’s primary stainless steel and a popular choice with Japanese bladesmiths, as it’s not heavily alloyed it is considerably easier to sharpen than most fully stainless steels commonly used.
