The Kichiji WA series is produced for Kataba by a small workshop based in Sakai City; the craftsmen have focused on producing a tough and easy to sharpen collection to meet the demands of cooks looking for workhorse knives.
Molybdenum vanadium steel was chosen for its ability to take a razor-sharp edge and hold it without being overly brittle, it is also fully stainless making it easy to care for. The blade is ground asymmetrically and has a 90/10 edge out of the box, we recommend sharpening this series before use as the factory edge is basic.
