The handle of this knife is made from Rosewood chosen for its durability; it is a traditional Japanese octagonal handle. This fully stainless san-mai series has a core of SG2 powdered steel which has excellent edge retention due to its heavy alloying. The shape of this series was inspired by the design of a famous Japanese battleship and the name Kotetsu refers to the extremely hard “Hagane” (hard steel) used in this series. Takayuki Shibata is a master sharpener based in Fukuyama city, Hiroshima prefecture.
