Muneishi Kurouchi Aogami-2 Stainless Clad Gyuto 220mm Magnolia Wood Handle
Muneishi Knives were established in 1955 in Tosayamada-machi, Kochi Prefecture. Hirotaka Muneishi began to help in forges from the 4th grade and inherited the company at the age of 18, there he makes use of his advanced skills and knowledge and is one of only a handful of craftsmen who can make hatchets and sickles in addition to knives. He was recognised as a Tosa traditional craftsman in 2012. This rustic Kurouchi series is stainless clad utilising Aogami-2 for the core material making it easy to maintain whilst having superior edge retention. This collection are quite deep so there’s a significant amount of knuckle clearance from the cutting surface.
Particular care must be taken to wipe and dry this series and a light coating of oil will help to protect the reactive cladding from oxidising.
