Yoshimi SG2 Damascus Gyuto / Chef's Knife 210mm Honduras Handle
Hand forged by Yoshimi Kato with a core of SG2 powdered steel at the core at approximately 63/65 HRC. This series has a beautiful aesthetic with awesome grinds, the pattern welded steel has a matte surface finish which makes the nickel layers in the damascus stand out and catch the eye.
The founder of Kato Hamono, Kintaro Kato, began forging knives in Echizen City, Fukui Prefecture, in 1928. His skills have been inherited by third-generation craftsman Yoshimi Kato, who is continuing to pass down their techniques to younger apprentices while making knives and sickles.
