The swirling damascus cladding on this series encases a layer of high carbon AUS-10 steel etched for high contrast, AUS-10 is similar to VG-10 but not as brittle. Made in Seki City Gifu prefecture by elite artisans, this series is elegant but strong and suitable for even the busiest professional kitchen. The octagonal rosewood handle is well finished and very comfortable in the hand.
