
Yoshikane SKD Hammered Santoku 165mm Chestnut Handle
Founded in 1919, Yoshikane Hamono is renowned as one of Japans leading knifemakers. Their workshop is in Sanjo, Nigata prefecture and is currently headed by Kazuomi Yamamoto. This series is a three-layer construction with a SKD11 core, this semi-stainless tool steel boasts superior edge retention whilst still being easy to resharpen.
The blade is forged with a distal taper with a fine tip. The spine is quite thick, but the blades stepped grind is fine behind the edge making this series excel at fine cutting, the subtle convexity and Tsuchime aid in food releasing as you cut. We highly recommend this series for those looking for an exceptionally fine edge that is not too demanding to maintain.
