USE & CARE
Hand wash with a soft sponge and wipe dry with a clean cloth. Copper will develop a rich patina over time. This will not affect the pan's cooking performance. In order to avoid the formation of verdigris, food should not be left in a pan after cooking. To keep looking new, use a copper polishing detergent or a combination of lemon juice and salt. Wash with washing up liquid before the first use. Avoid using any metal kitchen utensils. The Bozu pan cooks egg yolks sugar and Marsala wine quickly and evenly over a gentle heat. Makes easy work of whisking egg yolks over simmering water to get that perfectly thick and creamy Zabaglione custard. Use it also for general whisking of eggs, creamy conserves and jams. Copper is known to have special properties that yield foamier beaten eggs and airier whipped cream.
