Thank you for visiting KATABA Japanese Knife shop

The Knife Shed was established in 2016 by Yokichi and Yuko Seno following the growing success of their online Japanese knife store www.kataba.co.uk Since 2013. 

Yokichi spent more than 8 years in Tokyo and 20 years as a chef at Japanese restaurants in London, including Michelin stared restaurants and his last position as ‘executive head sushi & sashimi chef at ROKA Restaurant Group. Yokichi’s passion for Japanese knives is founded on his long experience of working with and maintaining these beautiful tools. 

In 2017 we were joined by the hugely talented sharpener Joshua Heaton, formerly of the Japanese Knife Company. Joshua purchased his first hammer forged Japanese knife during his apprenticeship at Brook Hall Cookery school at the age of 18, this started his obsession with carbon steel and freehand sharpening eventually leading him to work as a professional sharpener. He has travelled extensively in Japan learning about Japanese knifemaking and sharpening techniques.

All Japanese cooking knives are known for their high quality to chefs around the world and here KATABA we would like to introduce even finer, genuine handmade knives to as many people as possible.

We are dedicated to providing excellent knives and helping you get the best out of them. For this reason we offer  a range of aftercare services. These include sharpening, repairing chips, handle changing and balancing.*

*Please note, we offer handle changing on Japanese knives only.

KATABA’s motto is to provide knives of the most excellent cutting ability and usability at reasonable prices.

KATABA-Our store is named after KATABA, the traditional Japanese single bevel knife.
