Kichiji Josaku Kamagata Usuba 180mm Magnolia wood Octagonal handle
This is the Kansai style of Usuba, the name literally means “thin edge” as this shape is particularly thin behind the edge to facilitate exceptionally fine vegetable preparation. Hammer forged in Yasuki Shirogami-2 clad with soft iron with a Magnolia and Buffalo horn handle. Yasuki Shirogami is very pure which helps to give it a super fine grain structure when properly heat treated, its fine grain structure and minimal alloying mean it will take an exceptionally smooth edge easily whilst retaining it well. This knife is made in Sakai, Osaka Prefecture, renowned to produce single bevel cutlery.
