Kotetsu R2 Gyuto 210mm Jarrah Wood Handle
The Kotetsu series by Takayuki Shibata is renowned for its laser grind, this collection is extremely thin behind the edge and moves through ingredients effortlessly. The handle of this knife is made from Jarrah wood chosen for its durability; it is a traditional Japanese octagonal handle. This fully stainless san-mai series has a core of R2 powdered steel which has excellent edge retention due to its heavy alloying. The shape of this series was inspired by the design of a famous Japanese battleship and the name Kotetsu refers to the extremely hard “Hagane” (hard steel) used in this series. Takayuki Shibata is a master sharpener based in Fukuyama city, Hiroshima prefecture. Shibata-San hand sharpens all the Kotetsu series with his own unique method, this gives them both a polished but toothy edge making these knives truly breath taking to cut with out of the box.
