Kichiji Aogami-2 Yanagiba 240mm Magnolia Wood Octagonal Handle
The translation of Yanagiba is willow leaf edge referring to the distinctive shape which was developed in the Kansai area of Japan during the Edo period. Hammer forged in Aogami-2 clad with soft iron fitted with a Hakkaku Octagonal-shaped magnolia wood handle, this professional quality Sashimi knife is made using traditional methods by skilled artisans. The blade is forged in Sakai, Osaka Prefecture, renowned to produce single bevel knives, this series has a polished choil detail to differentiate it from the shirogami series. Aogami steel has better wear resistance than shirogami which translates to longer lasting sharpness although it is more challenging to sharpen.
