Kichiji VG-10 33 Layer Hammered Damascus Gyuto 210mm
This series is made by artisans in Osaka prefecture using VG-10 steel clad in damascus, the high hardness and wear resistance of the steel gives this collection good edge retention without it being too challenging to resharpen.
The blade has a stepped grind and Tsuchime finish helping it to move effortlessly through food whilst reducing food sticking. The balance on this series is closer to western style cutlery due to the western handle and stainless bolster.
