The rustic Nashiji finish on the blade contrasts nicely with the durable Pakka wood handle scales. The san-mai construction and stepped grind makes this line easy to thin or sharpen wide bevel style. Ginsanko is Hitatchi’s primary stainless steel and a popular choice with Japanese bladesmiths, as it is not heavily alloyed it is considerably easier to sharpen than most fully stainless steel commonly used.
