Kichiji Gisan Nashiji Santoku Knife 180mm (185mm) Red Wine Handle
This collection has a weight and balance more in line with European cutlery but with a traditional style Japanese blade, giving it fantastic cutting performance, ease of sharpening and low maintenance.
The rustic Nashiji finish on the blade contrasts nicely with the durable Pakka wood handle scales. The san-mai construction and stepped grind makes this line easy to thin or sharpen wide bevel style. Ginsanko is Hitatchi’s primary stainless steel and a popular choice with Japanese bladesmiths, as it is not heavily alloyed it is considerably easier to sharpen than most fully stainless steel commonly used.
