Kichiji 1141 AUS-8 Gyuto 240mm

This is a multi-purpose chef’s knife designed for the professional market; tough, durable, and highly practical. This workhorse collection from Sakai City has been designed for chefs and is both light and well balanced. The series is very thin with a full-flat asymmetrical grind making it well suited to precision cutting. High carbon stainless AUS-8 is an easy steel to sharpen and has good toughness making this series a great entry point for newcomers to Japanese Cutlery. This series has a right-handed 90/10 edge geometry.
