Goko Hamono Kogetsu Series Gyuto 240mm Brass Welding Bolster
The Kogetsu series made by Yoshito Yamakawa (Goko Hamono) are traditional "KANTO GYUTO" western style handled knives built to excel at fine cutting and last a lifetime, this no-nonsense collection of carbon steel knives is made from a single layer of high-carbon steel. Each knife goes through fifty processes in Yoshito’s workshop and is made without outsourcing any of the work, Yoshito learnt his craft in Kashiwa, Chiba under a master smith.
Due to each knife being individually crafted, no finish is ever the same; this is a knife for somebody who cares about performance, not perfect looks. The blades in this collection are extremely thin behind the edge which helps them to retain their sharpness well and makes them easier to resharpen, the blades have a zero-edge geometry meaning there is not a secondary bevel.

- Included Services: "Free sharpening" refers strictly to our standard edge sharpening.
- Additional Repairs: Any major restoration work—such as chip removal, thinning the blade, re-profiling, or rust removal—is not included in the free service and will incur additional charges.
