KOTETSU CHROMAX GYUTO 210MM ROSEWOOD HANDLE
The Kotetsu series by Takayuki Shibata is renowned for its laser grind, this collection is extremely thin behind the edge and moves through ingredients effortlessly. The handle of this knife is made from Rosewood chosen for its durability; it is a traditional Japanese octagonal handle. The name Kotetsu refers to the extremely hard “Hagane” (hard steel) used in this series. Takayuki Shibata is a master sharpener based in Fukuyama city, Hiroshima prefecture. Shibata-San hand sharpens all the Kotetsu series with his own unique method, this gives them both a polished but toothy edge making these knives truly breath taking to cut with out of the box.
The Chromax steel is a semi stainless tool steel like SKD11, it is easier to sharpen than many high alloy steels whilst being capable of taking an exceptionally fine edge and retaining its sharpness well.
