The Spirit of Kyoto, Naturally Grown: Introducing DOIT! FARM! to the UK
We are thrilled to announce our official partnership with DOIT! FARM!, bringing their exceptional, single-origin Kyoto Uji teas to the UK for the very first time.
As a small, family-run tea farm nestled in the historic region of Uji, DOIT! FARM! stands entirely apart from mass production. They practice true Shizen Nōhō (Natural Farming), meaning their crops are cultivated with absolute respect for the earth—entirely free from chemical pesticides and artificial fertilizers. Powered only by the natural richness of the soil and the daily care of a single family, every leaf captures the pure, unaltered essence of Kyoto.
Taste tea in its most authentic, pristine form. Discover a collection that is as kind to the body as it is to the planet.
Hojicha powder is a finely milled Japanese tea made from green tea leaves (such as Sencha or Bancha) that have been carefully roasted at high temperatures before being ground into a fine powder. Unlike bright green matcha, hojicha powder has a distinctive reddish-brown to cocoa colour and a comforting flavor profile rich with notes of caramel, roasted nuts, and light smoke. Because the roasting process breaks down much of the tea's caffeine and catechins, hojicha is extremely low in caffeine and free of any bitterness, making it highly gentle on the stomach and an ideal drink for evenings.
How to Prepare a Hojicha Latte
- Create the Base: Sift 1 teaspoon of hojicha powder into a cup or bowl. Add roughly 50–60 ml of hot water (around 80°C).
- Whisk: Use a traditional bamboo matcha whisk (chasen) or an electric milk frother to mix in a "W" or "M" motion until the powder is fully dissolved and slightly frothy.
- Combine: Pour the concentrated tea base over 180 ml of steamed, frothed milk (oat milk pairs exceptionally well with the nutty notes). Sweeten to taste with maple syrup or honey if desired
