KOGETSU GYUTO 210mm

The Kogetsu series made by Yoshito Yamakawa are traditional Kanto gyuto style western handled knives built to excel at fine cutting and last a lifetime, this no-nonsense collection of carbon steel knives is made from a single layer of SK-5 steel. Each knife goes through fifty processes in Yoshito’s workshop and is made without outsourcing any of the work, Yoshito learnt his craft under his father. Due to each knife being individually crafted, no finish is ever the same; this is a knife for somebody who cares about performance, not perfect looks. The blades in this collection are extremely thin behind the edge which helps them to retain their sharpness well and makes them easier to resharpen, the blades have a zero-edge geometry meaning there is not a secondary bevel.
