The Spirit of Kyoto, Naturally Grown: Introducing DOIT! FARM! to the UK
We are thrilled to announce our official partnership with DOIT! FARM!, bringing their exceptional, single-origin Kyoto Uji teas to the UK for the very first time.
As a small, family-run tea farm nestled in the historic region of Uji, DOIT! FARM! stands entirely apart from mass production. They practice true Shizen Nōhō (Natural Farming), meaning their crops are cultivated with absolute respect for the earth—entirely free from chemical pesticides and artificial fertilizers. Powered only by the natural richness of the soil and the daily care of a single family, every leaf captures the pure, unaltered essence of Kyoto.
Taste tea in its most authentic, pristine form. Discover a collection that is as kind to the body as it is to the planet.
WA_ KOUCHA Japanese Black Tea 50g
Wa-koucha (和紅茶), literally translating to "Japanese black tea" ("wa" meaning Japanese and "koucha" meaning black tea), is a unique and rapidly growing category of fully oxidized tea produced in Japan. Unlike bold, malty black teas from India or Sri Lanka, Wakoucha is celebrated for its naturally sweet, mild, and low-tannin flavor profile, featuring delicate floral and fruity notes that can be thoroughly enjoyed without milk or sugar
- Flavor Notes: Honey, flowers, light stone fruits, and mild earthiness.
- Liquor: A warm, clear reddish-orange hue with minimal bitterness.
-
Major Regions: Primarily grown in rich tea-producing prefectures like Shizuoka, Kagoshima, Kumamoto, Mie, and Kyoto.
Standard Brewing GuideWakoucha is highly forgiving compared to Japanese green tea, though it requires slightly different care than standard English black teas:
- Ratio: 3 grams of loose leaf tea per 140–150ml of water.
- Temperature: 90°C to 95°C (slightly below boiling). Note: For converted sencha cultivars, aim closer to 85°C–90°C to protect the delicate flavor.
- Time: Steep for 2 to 3 minutes.
